Dough molding, a technique of making wheat-flour food, has been recorded in Chinese Character as early as in Han Dynasty(206 BC-220 AD). According to its making, the whole processing can be divided into four main steps, including pressing, pinching, inlay, and rolling, and its skill has the nickname civilian's thoraces, soldier's belly, the senior's back, and beauty's waist, which embodies the craftsman's technique level. Just as its name implies, it has been mainly taken as people's food, then with improvement of people's livings, a kind of hand made craftwork derived from the making of dough food, which we call dough molding. As the making style of dough molding is concerned, geographically it is with the character of primitivity and simplicity, rough, boldness and unconstrainedness, and profundity in the area of Yellow River; while along the banks of Yangtse, with the features of particularity, elegance, and refinement. |
